Red Hill fruit is picked when mature and still partially green. Keep Papaya at room temperature (1-4 days) as it yellows and ripens it will sweeten, become juicer and the texture soften. Once ripe cut up and keep in the fridge in an airtight container (once ripe it can also go uncut in the fridge for up to 5 days).
